Wanted to use another recipe besides my previous post. Turns out alright. Modified a little again as I saw that the recipe calls for 200g sugar. Way too sweeeet for me though I have a sweet tooth. Prefer the subtle bitter cocoa taste.

60g self raising flour
30g unsweetened organic cocoa powder
120g castor sugar
115g unsalted butter
3 small eggs
1 capful of vanilla essence
Pinch of salt
Steps:
Melted butter over double boil method
Add sugar and whisk till dissolved
Crack eggs one by one and whisk
Pour flour and cocoa powder and whisk till combined and smooth
Transfer batter into rice cooker pot and cook (15min)

steamed bana cake
Got this recipe here.

Wanted to try how the taste and texture will be like in a rice cooker using a steam function instead of cake.
Steps:
3 small eggs
100g brown sugar
2 large bananas, mashed
150g self raising flour
1/8 baking soda
75g soya bean oil
Beat in eggs and sugar in stand mixer till ribbon stage and double in volume.
Scrape down sides and beat again.
Add mashed banas and hand mix.
Sift in flour and baking powder, beat in low speed.
Add the oil and hand mix.
Pour batter in rice cooker pot and press STEAM function.
Invert and let cool when done.
Crust is browned as usual for using a rice cooker. Texture was soft unlike my previous 'cake' function ones. However, I also used a different recipe so was not sure if it is the recipe or the 'steam' function. But heck, as long as objective is met, doesn't matter. Heh..

Moist Bana Chocolate Cake
Been a long time since I made this personal favorite. I have better results using rice cooker than oven. Sometimes getting an atas oven doesn't do justice to my hard worked batter. Hehe

60g unsalted butter
150g sugar
40g unsweetened cocoa powder
125g cake flour
3/4 tsp baking powder
3/4 tsp bicarbonate soda
150g banana flesh, mashed
1 egg plus another 1 egg white (I use small ones), beaten
120g chilled fresh milk
Method
-Double boil butter with sugar and half of the fresh chilled milk.
-Stir till butter and sugar melt.
-Remove from heat.
-Add remaining chilled milk to hot mixture so the temperature cools down and loses heat faster. (Thanks to the science concepts I always teach and thus applied them)
-Add mashed Bana to the mixture and keep stirring to lose a bit more heat.
-Mix in the beaten egg and stir well.
-Sift flour, baking powder, soda, cocoa powder into a large bowl.
-Pour wet mixture slowly and mix in with the dry ingredients till combined.
-As mentioned by Ah bee, the batter should be runny.
-Pour batter into pot and press CAKE function.
-Remove pot when done (mine takes about 50min).
-Invert and let cool.
Review:
Shiok eh! I cut down on sugar as I wanted to taste more of the bitter cocoa. I liked the smell, taste and texture. So glossy and shiny. Sliced piece standing tall and strong! Thanks for the great recipe!

chocolate souffle jap cheesecake
Rice Cooker Cake #6
Inspired by Lilis chandra.. I used my rice cooker to cook this chocolate souffle jap cheesecake. Adapting from her source stated in her post. Could not get the dark tone as hers though.
A
50g cake flour
15g potato flour (no corn flour)
15g unsweetened cocoa
Pinch of salt
-sift all
B
140g cream cheese (I used 200g as I did not want to keep and store)
20g dark choc
40g butter
80ml milk
2tsp lemon juice
78g yolks (I used about 5 yolks)
- melt cheese, dark choc, butter using double boiler mtd. Add milk and hand whisked till smooth.
- chill a while and then sieved twice. - add to A and mix well.

180g whites (about 6 whites)
90g castor sugar
- I used stand mixer to whisk till stiff peaks formed. Add sugar in 3 batches.
- Scrape 1/3 meringue into mixture A+B and mix well with hand whisk.
- Add the remaining whites and use about spatula to fold till whites cannot be seen.
- pour slowly into rice cooker pot. Bang few times.
- place into rice cooker and press CAKE tab.
- remove and invert cake from pot immediately and let cool completely. - love the wobbly jiggle as u hold the piece up to savor. :)

Cocoa Bana Cake v2
Cocoa Bana Cake Version 2!
The first try was goody! My 18mo Kai loves it and kept asking me for more! Happy mummy! Hub thinks it was not sweet but that was fine with me as I never meant it to be sweet anyway since Kai eats that. However, the cake was quite crumbly and I googled to troubleshoot. Seems need to add more oil/water.
So now, this was my 2nd version. Following the same website and method, I added my own modification.

Ingredients
- 200g all purpose flour + 25g unsweetened cocoa powder(sifted)
- 100g sugar
- 2 eggs
- 120g butter
- 3 bananas
- 60ml water
- 3 tsp baking powder (sifted)
- 3 tsp baking powder (sifted)
Method
- Mash bananas in your largest mixing bowl.
- In a separate bowl, mix butter with sugar until smooth, then add eggs and water.
- Mix both mixtures together then add the flour.
- Put in rice cooker pot and press CAKE tab.
- After the BEEP, remove immediately and invert on a rack to cool before slicing.
YES! The cake is not crumbly!

Cocoa Bana Cake v1
Cocoa Banana Cake!
Another easy recipe for me. Saw 3 lonesome amigos (bananas) and decided to try using rice cooker again.
Actually I tried to redo my 1st chiffon cake again yesterday morning but failed. I used brown sugar and butter. Too dense. So I'm sticking back to white sugar and vco.
Hunger for cakes set in through the day and finally got to baking a cocoa bana version when the sun sets. Yippee. Worked!

My version:
-200g all purpose flour

-texture may seem dry but once baked it's not an issue.
-pour into rice cooker pot and press CAKE tab.
-remove once done.
-invert and let cool.
-slice and eat! :)

Double Portion Cocoa Cake

This choca lover is at it again. Fueled by the previous cocoa brownie cake, I decided to try what happens if I double my recipe.

Using back the above, I did my modification:
*Oil:
- 1/2 cup melted butter(realised not enough!) + 1/3 cup olive oil
*Sugar:
- 1 cup + 1 tbsp
*Flour:
- 1 cup, sifted
*Salt:
- 1/4 tsp x2, sifted
*Baking Powder:
- 1/4 tsp x2, sifted
*Cocoa Powder, unsweetened:
- 1/3 cup x2, sifted
*Eggs:
- 6 small
*Vanilla Essence :
- none! Forgot I used up! hehe
Steps are the same as stated in the webpage.
However, this cooked more than 10min as opposed to my previous coca one. I opened 3x to check for done-ness as I did not want to burn the base. Passed the skewer test after around 30min. Remove pot. Invert immediately on a rack. I inverted the cake back as you can see the impression on the pix below. Gooey goodness! Q artistic I think. Haha. Cool for a while, cling wrap and chill in fridge overnight. I sliced this just now and it has set pretty well. Easy to slice too. Love the gloss on the surface. Saves me time to prepare another glaze.
2 versions:
- Single portion (picture at the bottom) can be eaten immediately after cooled as it cooked very fast as observed in my previous post.
- Double portion (right below) had to be completely chilled before eating. I guess the texture was still dense and heavy and though passed the skewer test, still needed to set the gooey part.
Both have their merits and equally satisfying for me!

Craving badly for chocolate cake since my failed attempt to make a white choc chiffon cake last Thursday. Concluded melted choc and chiffon don't make a good pair. Too heavy the batter. Out of the window!
So well. Got into action and scoured for another yet simple and ez pz cocoa choca cakey.
Did it just and it was gooooood! Best part mummies, no need to whip any whites. Just grab all the ingredients and mix mix mix! Did I hear YAY?!

Modified version:
- 1/2 cup melted butter (I personally feel butter brings out the best taste to cakes even as compared to vco)
- 70g sugar (I followed my chiffon cake recipe as I like the mild sweetness)
- 1/4 tsp baking powder
- 1/4 tsp vanilla essence
- 1/4 tsp sea salt
- 1/2 cup all purpose flour
- 1/3 organic cocoa powder
- 4 small eggs
Now, this is a brownie recipe, so the amount of flour used is not alot as brownies are supposed to be flatter. Do google or prepare any chocolate cake mix of ur own preference. Works equally fine.
Method:
- melt butter and sugar. Whisk well to allow sugar to melt. Remove from heat and cool.
- crack eggs separately in a clean bowl and whisk lightly.
- add essence, melted butter and sugar to beaten eggs. Whisk again.
- sift dry ingredients: flour+salt+baking powder+cocoa powder
- pour into wet batter. Whisk till combined.
-pour into rice cooker pot.
- press CAKE/COOK

NOTE:
this cooks very fast for my cooker. After washing and clearing my kitchen, I opened to check and was surprised it was done. I estimated to be 10min. Do the skewer test. I inserted my knife and it came out clean.
- switch off
- remove pot
- invert cake out immediately
- let cool on rack
- slice and chill in fridge (I read chilling it sets the chocolate and makes it better. It's 'chilling' in the fridge as I type. Will test tmr. Hehe)
I have no idea why it sunk in the middle. Looks like a big donut. But hey, it's cute huh. Still love the shiny tone crust.

- 250g philadelphia cream cheese block, double boiled to melt it
- 80g cake flour, sifted
- 80g sugar
- juice from half a lemon
- 60ml melted butter
Steps:
Exactly the same as the chiffon cake preparation.
I just added the melted cream cheese together with the beaten yolks+butter+sugar+flour+lemon juice.
I forgot to add water! Haha. But works well.
Crust not as nice as yesterday’s but the interior is very fluffy!
All these are trial and error. Do try ur version and share!
The catch is the meringue (whipped whites). No need tartar to stabilise as shown in the other pic. Once soft peaks achieved, ur cake is halfway to success! It helps in the fluffiness. And I did time today. It’s indeed ard 50min. Those without CAKE function, you may have to try and adjust as diff cookers diff heat.

Maybe I shall try a cheese cake version nx round.
