chocolate souffle jap cheesecake

Rice Cooker Cake #6

Inspired by Lilis chandra.. I used my rice cooker to cook this chocolate souffle jap cheesecake. Adapting from her source stated in her post. Could not get the dark tone as hers though.


A

50g cake flour

15g potato flour (no corn flour)

15g unsweetened cocoa

Pinch of salt

-sift all


B

140g cream cheese (I used 200g as I did not want to keep and store)

20g dark choc

40g butter

80ml milk

2tsp lemon juice

78g yolks (I used about 5 yolks)

- melt cheese, dark choc, butter using double boiler mtd. Add milk and hand whisked till smooth.

- chill a while and then sieved twice. - add to A and mix well.


C

180g whites (about 6 whites)

90g castor sugar

- I used stand mixer to whisk till stiff peaks formed. Add sugar in 3 batches.


- Scrape 1/3 meringue into mixture A+B and mix well with hand whisk.

- Add the remaining whites and use about spatula to fold till whites cannot be seen.

- pour slowly into rice cooker pot. Bang few times.

- place into rice cooker and press CAKE tab.

- remove and invert cake from pot immediately and let cool completely. - love the wobbly jiggle as u hold the piece up to savor. :)

Cocoa Bana Cake v2

Cocoa Bana Cake Version 2!

The first try was goody! My 18mo Kai loves it and kept asking me for more! Happy mummy! Hub thinks it was not sweet but that was fine with me as I never meant it to be sweet anyway since Kai eats that. However, the cake was quite crumbly and I googled to troubleshoot. Seems need to add more oil/water.

So now, this was my 2nd version. Following the same website and method, I added my own modification.

Ingredients

- 200g all purpose flour + 25g unsweetened cocoa powder(sifted)
- 100g sugar 
- 2 eggs 
- 120g butter 
- 3 bananas
- 60ml water
- 3 tsp baking powder (sifted)

Method

  1. Mash bananas in your largest mixing bowl.
  2. In a separate bowl, mix butter with sugar until smooth, then add eggs and water.
  3. Mix both mixtures together then add the flour.
  4. Put in rice cooker pot and press CAKE tab. 
  5. After the BEEP, remove immediately and invert on a rack to cool before slicing.
YES! The cake is not crumbly!

Cocoa Bana Cake v1

Cocoa Banana Cake!

Another easy recipe for me. Saw 3 lonesome amigos (bananas) and decided to try using rice cooker again.

Actually I tried to redo my 1st chiffon cake again yesterday morning but failed. I used brown sugar and butter. Too dense. So I'm sticking back to white sugar and vco.

Hunger for cakes set in through the day and finally got to baking a cocoa bana version when the sun sets. Yippee. Worked!

My version:
-200g all purpose flour
-25g cocoa powder (unsweetened)
-3tsp baking powder
(Sift all the above)
-100g sugar (hub says not sweet enough which is my aim as I feed this to my 18mo son)
-3 ripe banas (del monte), mashed
-2 eggs
- 115g butter

steps:
-melt butter and set aside to cool.
-whisk eggs together with sugar
-add mashed banas and mix
-add butter and mix
-add sifted flour, cocoa, baking powder slowly and mix
-do not overmix. Leave it lumpy.
-texture may seem dry but once baked it's not an issue.
-pour into rice cooker pot and press CAKE tab.
-remove once done.
-invert and let cool.
-slice and eat! :)

Double Portion Cocoa Cake

This choca lover is at it again. Fueled by the previous cocoa brownie cake, I decided to try what happens if I double my recipe.

Using back the above, I did my modification:

*Oil:
- 1/2 cup melted butter(realised not enough!) + 1/3 cup olive oil
*Sugar:
- 1 cup + 1 tbsp
*Flour:
- 1 cup, sifted
*Salt:
- 1/4 tsp x2, sifted
*Baking Powder:
- 1/4 tsp x2, sifted
*Cocoa Powder, unsweetened:
- 1/3 cup x2, sifted
*Eggs:
- 6 small
*Vanilla Essence  :
- none! Forgot I used up! hehe

Steps are the same as stated in the webpage.
However, this cooked more than 10min as opposed to my previous coca one. I opened 3x to check for done-ness as I did not want to burn the base. Passed the skewer test after around 30min. Remove pot. Invert immediately on a rack. I inverted the cake back as you can see the impression on the pix below. Gooey goodness! Q artistic I think. Haha. Cool for a while, cling wrap and chill in fridge overnight. I sliced this just now and it has set pretty well. Easy to slice too. Love the gloss on the surface. Saves me time to prepare another glaze.

2 versions:
- Single portion (picture at the bottom) can be eaten immediately after cooled as it cooked very fast as observed in my previous post.

- Double portion (right below) had to be completely chilled before eating. I guess the texture was still dense and heavy and though passed the skewer test, still needed to set the gooey part.

Both have their merits and equally satisfying for me!

mini Nutella poppies

Mini nutella poppies. There is a version circulating online for quite some time and there are mummies who have tried them. So I decided to try and modify a bit.

Original recipe at the bottom. Very easy steps to follow.

Mine:
Steps are the same. Instead of using eggs, I used chia seeds to replace.
1 tablespoon milled chia seeds : 3 tablespoons water
Mix and stir.
Set aside till it turns gooey, like the consistency of a beaten egg.

This recipe calls for 2 eggs, so I doubled it.
Mix all and scoop into mould. This is actually a cake pop maker silicon mould. Decided to try if it works. It did!

BAKE:
- 180 degrees for 20-30min, depending on your oven. Do the skewer test. Mine took shorter maybe the batter is smaller in size and bakes faster.
- Remove from oven and let chill.
- The poppies are easily remove by inverting the mould gently.

Healthy Version:
- pair the poppies with chopped fruits or homemade jams

Sinful Version:
- pair the poppies with chilled condensed milk/ice cream/whipped cream!

udon in pasta sauce

I like to try and experiment food in my kitchen. Decided to test if East is able to meet West harmoniously. You bet how glad it did!

A simple yet touching love story with a happy ending... in my tummy. =)

Steps:
- cook udon according to package instructions. I got mine at Daiso.
- I rinsed the cooked noodles a few times as I find it a tad too salty for my liking.
- Splash olive oil and saute with preferred meat till cooked and fragrant. I used minced meat.
- Heat pasta sauce in. Mine was bottled prepared (Preggos so far my fav choice)
- Stir and let simmer.
- Add back the cooked noodles and stir to coat evenly. I did this step as I rinsed the noodles in water and they became cold.
- Pour in clean bowl and slurrrp!

KIDS Version:
- Greens (eg: broccoli) can be added for nutritional value.
- Homemade pasta sauce instead of bottled.

**Usually I will test it on myself first before modifying for my toddler. Since this union works perfectly, I will prepare a kid friendly version for my son.

Oven Baked

Tried fritatta and was pleasantly surprised how simple it took to get all together. Did all these while son was napping. And his naps are really short and gets shorter if he senses I am not within his radar.

Preparation:
- Preheat oven, 180 degrees, 20 min
- Oil muffin tray
- Beat 2 eggs
- Trim broccoli florets (pre soak them, qty depends on individuals)
- Cut salmon into small cubes (qty again on individuals)


Steps:
- Place salmon cubes into the wells.
- Add broccoli florets.
- Pour and divide egg mixture into the wells.
-  Sprinkle shredded cheese of own choice.
- Insert muffin tray into upper rack of the oven.
- Set according to your oven's instructions. (mine was 180, 20min)
- Check for done-ness. I love mine crispy and burnt, so I added another 5 min to set.

Remove from oven and allow cool. Remove from wells and serve! Yay!
