Double Portion Cocoa Cake

This choca lover is at it again. Fueled by the previous cocoa brownie cake, I decided to try what happens if I double my recipe.

Using back the above, I did my modification:

*Oil:
- 1/2 cup melted butter(realised not enough!) + 1/3 cup olive oil
*Sugar:
- 1 cup + 1 tbsp
*Flour:
- 1 cup, sifted
*Salt:
- 1/4 tsp x2, sifted
*Baking Powder:
- 1/4 tsp x2, sifted
*Cocoa Powder, unsweetened:
- 1/3 cup x2, sifted
*Eggs:
- 6 small
*Vanilla Essence  :
- none! Forgot I used up! hehe

Steps are the same as stated in the webpage.
However, this cooked more than 10min as opposed to my previous coca one. I opened 3x to check for done-ness as I did not want to burn the base. Passed the skewer test after around 30min. Remove pot. Invert immediately on a rack. I inverted the cake back as you can see the impression on the pix below. Gooey goodness! Q artistic I think. Haha. Cool for a while, cling wrap and chill in fridge overnight. I sliced this just now and it has set pretty well. Easy to slice too. Love the gloss on the surface. Saves me time to prepare another glaze.

2 versions:
- Single portion (picture at the bottom) can be eaten immediately after cooled as it cooked very fast as observed in my previous post.

- Double portion (right below) had to be completely chilled before eating. I guess the texture was still dense and heavy and though passed the skewer test, still needed to set the gooey part.

Both have their merits and equally satisfying for me!

mini Nutella poppies

Mini nutella poppies. There is a version circulating online for quite some time and there are mummies who have tried them. So I decided to try and modify a bit.

Original recipe at the bottom. Very easy steps to follow.

Mine:
Steps are the same. Instead of using eggs, I used chia seeds to replace.
1 tablespoon milled chia seeds : 3 tablespoons water
Mix and stir.
Set aside till it turns gooey, like the consistency of a beaten egg.

This recipe calls for 2 eggs, so I doubled it.
Mix all and scoop into mould. This is actually a cake pop maker silicon mould. Decided to try if it works. It did!

BAKE:
- 180 degrees for 20-30min, depending on your oven. Do the skewer test. Mine took shorter maybe the batter is smaller in size and bakes faster.
- Remove from oven and let chill.
- The poppies are easily remove by inverting the mould gently.

Healthy Version:
- pair the poppies with chopped fruits or homemade jams

Sinful Version:
- pair the poppies with chilled condensed milk/ice cream/whipped cream!

udon in pasta sauce

Pots & Pans Savory

I like to try and experiment food in my kitchen. Decided to test if East is able to meet West harmoniously. You bet how glad it did!

A simple yet touching love story with a happy ending... in my tummy. =)

Steps:
- cook udon according to package instructions. I got mine at Daiso.
- I rinsed the cooked noodles a few times as I find it a tad too salty for my liking.
- Splash olive oil and saute with preferred meat till cooked and fragrant. I used minced meat.
- Heat pasta sauce in. Mine was bottled prepared (Preggos so far my fav choice)
- Stir and let simmer.
- Add back the cooked noodles and stir to coat evenly. I did this step as I rinsed the noodles in water and they became cold.
- Pour in clean bowl and slurrrp!

KIDS Version:
- Greens (eg: broccoli) can be added for nutritional value.
- Homemade pasta sauce instead of bottled.

**Usually I will test it on myself first before modifying for my toddler. Since this union works perfectly, I will prepare a kid friendly version for my son.

Oven Baked

Tried fritatta and was pleasantly surprised how simple it took to get all together. Did all these while son was napping. And his naps are really short and gets shorter if he senses I am not within his radar.

Preparation:
- Preheat oven, 180 degrees, 20 min
- Oil muffin tray
- Beat 2 eggs
- Trim broccoli florets (pre soak them, qty depends on individuals)
- Cut salmon into small cubes (qty again on individuals)


Steps:
- Place salmon cubes into the wells.
- Add broccoli florets.
- Pour and divide egg mixture into the wells.
-  Sprinkle shredded cheese of own choice.
- Insert muffin tray into upper rack of the oven.
- Set according to your oven's instructions. (mine was 180, 20min)
- Check for done-ness. I love mine crispy and burnt, so I added another 5 min to set.

Remove from oven and allow cool. Remove from wells and serve! Yay!

Korean Air Fryer Savory

Could not resist to get another gadget for my kitchen. Refused to pay so much for a branded fryer so settled for this 360 Korean one. Half the price but twice the satisfaction!

Tried to recycle my lean meat used from boiling soup. We do not have the habit of eating the meat as it would have turned hard after its juices were seeped into the nutritious pot of liquid.

Shredded the tough meat and it was hard work! So I did half of the meat. Placed them on the rack and air fried them. Result was fast and crispy. However, they lost the crispiness after a few days. Maybe the container was not air tight enough.

The picture below was my first trial of preparing wings. Simple marination of black soya sauce and brown sugar. Drizzled black pepper before air frying. Result was needless to say. Mmmmmm!

Korean Air Fryer Savory

Got to eat a KFC bucket rice and it was really yummy sans the saltiness. Thus, I wanted to recreate it and went on a research hunting on the internet.

The process was tedious and I was proud of my work. Again, glory to God for my self-proclaimed success!

Steps:
1)Rice:
- Prepare as normal.
- Add chopped garlic (adjust to your liking. I used about half a clove of whole garlic for the hub and I)
- Set COOK

2) Sauce:
- Slice one small can of button mushrooms thinly.
- Saute a knob of unsalted butter with the mushrooms till fragrant and butter melts.
- Add soup stock (did not measure, it is up to you how much sauce u want) and stir.
- Add flour (did not measure too, up to you to decide how thick u want) and mix quickly to prevent lumps from forming. As a rule of a thumb, I added flour slowly till the consistency I want.

3)Chicken pops
- Slice chicken breast meat thinly into strips and cube them.
- Season with cajun seasoning (most supermarts have it) and add other herbs if preferred. I added black pepper. Chill in fridge for a few hours.
- Prepare 3 bowls: 1 beaten egg, flour, breadcrumbs
- Dip cubes into egg, flour, breadcrumbs in order
- Place on rack in the air fryer.
- Spray olive oil till cubes are covered.
- Turn knob (40min).
- Remove once done.

4) Assembling:
- Scoop rice into clean bowl.
- Arrange fried cubes on one side.
- Drizzle sauce on the other.
-EAT!

Verdict:
It was really not bad on my first try. Though the steps were pretty tedious to follow. The only drawback was the sauce, Too little, the hub commented. Taken note. =)

Rice Cooker Meat
This picture attached was done last year where I was still using my old cooker with only COOK and WARM functions. That’s all. Again, I wanted a no frills easy baked chicken without cleaning the mess in the oven. So I tried using my old rice cooker to “roast”. For this effect, I pressed about 3-4x till I was satisfied with the color. And it’s done. Really simple, soft and tasty. Another dish u can do for ur little ones. 

Recipe:
-Marinate in your fav sauce. I used miso and honey. Leave few hours in fridge or overnight
-lay the skin facing down without the marinate. Browns nicer.
-cover lid and press COOK. Press additional times when switched to warm till satisfied.
-I flipped to the other side to ensure even browning.
-separately heat remaining sauce over rice or noodles.

Cocoa Cake

Craving badly for chocolate cake since my failed attempt to make a white choc chiffon cake last Thursday. Concluded melted choc and chiffon don't make a good pair. Too heavy the batter. Out of the window!
So well. Got into action and scoured for another yet simple and ez pz cocoa choca cakey.
Did it just and it was gooooood! Best part mummies, no need to whip any whites. Just grab all the ingredients and mix mix mix! Did I hear YAY?!

Modified version:
- 1/2 cup melted butter (I personally feel butter brings out the best taste to cakes even as compared to vco)
- 70g sugar (I followed my chiffon cake recipe as I like the mild sweetness)
- 1/4 tsp baking powder
- 1/4 tsp vanilla essence
- 1/4 tsp sea salt
- 1/2 cup all purpose flour
- 1/3 organic cocoa powder
- 4 small eggs
Now, this is a brownie recipe, so the amount of flour used is not alot as brownies are supposed to be flatter. Do google or prepare any chocolate cake mix of ur own preference. Works equally fine.
Method:
- melt butter and sugar. Whisk well to allow sugar to melt. Remove from heat and cool.
- crack eggs separately in a clean bowl and whisk lightly.
- add essence, melted butter and sugar to beaten eggs. Whisk again.
- sift dry ingredients: flour+salt+baking powder+cocoa powder
- pour into wet batter. Whisk till combined.
-pour into rice cooker pot.
- press CAKE/COOK

NOTE:
this cooks very fast for my cooker. After washing and clearing my kitchen, I opened to check and was surprised it was done. I estimated to be 10min. Do the skewer test. I inserted my knife and it came out clean.
- switch off
- remove pot
- invert cake out immediately
- let cool on rack
- slice and chill in fridge (I read chilling it sets the chocolate and makes it better. It's 'chilling' in the fridge as I type. Will test tmr. Hehe)
I have no idea why it sunk in the middle. Looks like a big donut. But hey, it's cute huh. Still love the shiny tone crust.

Rice Cooker 2
Japanese cheesecake.
Seeing double? Of coz not. Another easy peasy rice cooker cake with a twist!
Using back my same chiffon cake steps.

Modifed:
- 250g philadelphia cream cheese block, double boiled to melt it
- 80g cake flour, sifted
- 80g sugar
- juice from half a lemon
- 60ml melted butter
Steps:
Exactly the same as the chiffon cake preparation.
I just added the melted cream cheese together with the beaten yolks+butter+sugar+flour+lemon juice.
I forgot to add water! Haha. But works well.
Crust not as nice as yesterday’s but the interior is very fluffy!
All these are trial and error. Do try ur version and share!
The catch is the meringue (whipped whites). No need tartar to stabilise as shown in the other pic. Once soft peaks achieved, ur cake is halfway to success! It helps in the fluffiness. And I did time today. It’s indeed ard 50min. Those without CAKE function, you may have to try and adjust as diff cookers diff heat.

1st Chiffon Cake

Woo hoo! 1st attempt to bake from my trusty rice cooker. Looks like cheese cake right? Haha.. nope. I used a chiffon cake recipe instead. I love the brown and shiny tone crust! Still fluffy inside.
Maybe I shall try a cheese cake version nx round.

My version:
I used 6 small eggs, cake flour, virgin coconut oil and vanilla essence.
- After mixing the batter, pour it into the rice cooker bowl.
- Tap the bowl on the table a few times to stabilize the batter.
- Rest the bowl into the rice cooker.
- Press “CAKE” function.
- Remove the bowl immediately after the beep.
- Invert bowl and remove cake.
- Allow it to cool on the wire rack.
- Slice, serve, eat!
